Rajma (kidney beans) Onion, tomatoes Ginger-garlic paste Kashmiri red chili powder Garam masala , salt , oil Fresh coriander
Soak the rajma overnight for a soft, melt in your mouth texture. Drain and rinse well before cooking
Add the soaked rajma, tomatoes, and water. Let it simmer for 30-40 minutes, allowing the beans to absorb all those wonderful flavors
In a pan, heat oil and sauté onions until golden. Add ginger garlic paste This base adds depth to the curry
Now add ½ cup of yogurt whisked with 1 teaspoon all purpose flour and cook for a minute.
Add spice powders coriander, turmeric , garam masala and Kashmiri red chili cook until oil separates from the pan’s sides.
Add the cooked rajma and the water AND chopped cilantro, salt 10-12 minutes, stirring a few times
Serve your Kashmiri Rajma hot with steamed rice or naan. Enjoy the rich, spicy goodness of this hearty dish
