Kala chana Onion Tomatoes Ginger-garlic paste Salt and oil Fresh coriander Spices: turmeric, red chili, cumin, garam masala , kasoori methi, amchur powder
Soak kala chana overnight. Next day, pressure cook it with water and a pinch of salt for 4-5 whistles until soft and cooked through
Heat oil, sauté cumin seeds, then add onions and cook until golden. Stir in ginger garlic paste and cook until the raw smell disappears
Add tomato puree, turmeric, red chili powder, and salt. Cook until oil separates from the masala, indicating it's perfectly cooked.
Add the kala chana and mix well. Simmer for 10-15 minutes, allowing the flavors to meld. Add water as needed for desired consistency.
Add kasuri methi , amchur powder & garam masala, and mix well. Stir for another 1 minute.
Garnish with fresh coriander and a squeeze of lemon. Serve hot with rice, roti, or enjoy it as a protein rich snack
