Rajma (red kidney beans) curry is the ultimate North Indian comfort dish. Rich, flavorful, and nourishing let’s dive into this cozy recipe step by step.
Rajma Onion Tomatoes Ginger-garlic paste Spices: Cumin, turmeric, coriander, red chili, garam masala ,mango powder, whole spices Oil & salt Fresh coriander
Soak rajma overnight for softness. Pressure cook with salt and water for 5-6 whistles until they’re tender and easy to mash.
Heat oil, add cumin,whole spices then onions. Sauté till golden brown. Add ginger garlic paste and cook till fragrant
Now add ¾ cup finely chopped tomatoes and 3 tablespoon canned tomato puree and cook for a minute. .
Add the oriander powder ,turmeric ,Kashmiri red chili powder, cumin , dry mango garam masala powder cook for 10-12 seconds.
Mix in boiled rajma with its water. Simmer on low for 20-25 mins. Mash a few beans to thicken the gravy naturally
Finish with sprinkle of kasuri methi and coriander Simmer a few more minutes for full flavor infusion
