Bright, nutritious, and packed with flavor Beetroot Rice is the perfect one pot dish for lunch or dinner. Let’s make it in just a few steps
Basmati rice Grated beetroot Mustard seeds Onion , green chilies Ginger-garlic paste Salt, turmeric, oil Curry leaves Lemon juice ,cashews
Use freshly cooked or leftover rice. Let it cool completely before mixing it helps prevent clumping
Heat oil in a pan. Add mustard seeds, curry leaves, and chopped onions. Add green chilies and sauté until soft. Add ginger garlic paste if using.
Add Grated Beetroot
1 cup of grated beetroot, and cook for an additional 2 minutes.
Add turmeric, coriander powder, garam masala, cumin powder and mix well. creating a savory base
Add your cooked rice to the beetroot mix. Gently toss until every grain is coated with that beautiful pink color.
Add roasted cashews or peanuts for crunch. A squeeze of lemon juice enhances the taste. Mix well and cook for 2 more minutes
Serve hot with curd, raita, or papad. A colorful and wholesome dish in under 20 minutes perfect for home or lunchbox
