Basmati rice Onion Green chilies Ginger-garlic paste Ghee ,salt Mixed vegetables : carrot, peas, beans , cauliflower Whole spices : cinnamon, cardamom, cloves ,bay leaf ,star anise Coriander, lemon ,cashew
Rinse and soak basmati rice for 20 minutes. This helps it cook evenly and stay fluffy.
Heat ghee, add whole spices (like cumin, bay leaf, cardamom, ,cloves,) sauté onions ,green chili ,Ginger garlic paste, cashew till golden.
Then add the green beans, peas and cauliflower. Again, allow to cook on a medium to low flame until about 40-50% cooked.
Add rise and water Make sure that all the rice and veggies are submerged in water.Bring to a boil.
Turn the heat to medium low. Cover, and cook till the rice and veggies absorb all the water and are cooked through.
Let it rest, fluff with a fork, and serve hot with raita or pickle. Perfect for lunchboxes or quick dinners
