Chicken Basmati rice Onions (sliced & fried) Yogurt Ginger garlic paste Spices: Red chili, garam masala, Turmeric Whole spices : cloves, cinnamon cardamom, bay leaf, saffron Handful mint & coriander Salt & ghee, lemon juice Fresh coriander leave
Mix chicken with yogurt, ginger garlic paste, red chili powder, turmeric, salt, lemon juice & garam masala. Rest for 1–4 hours
Boil basmati rice with salt and whole spices (like cardamom, cloves, bay leaf) until 70% cooked. Drain and keep aside.
Slice onions thin and fry them until golden brown. These add a rich, sweet flavor to your biryani layers.
To the pan with the remaining ghee, add the marinated chicken. Cook on medium heat for 8 to 10 minutes, turning halfway through.
In a thick pot, add marinated chicken at the bottom. Layer with rice, fried onions, mint, coriander & saffron milk.
Cover tightly with a lid or dough. Cook on low heat for 30–40 mins. This slow cooking locks all the flavors in
Turn off the heat and let it rest for 10 mins. Gently fluff the rice your biryani is ready to serve
