Gather potatoes, onions, garlic, butter, vegetable broth, heavy cream, salt, pepper, and shredded cheese for extra richness.
Peel and chop the potatoes into small cubes. This helps them cook evenly and blend into the creamy soup texture.
In a large pot, melt butter and saute chopped onions and garlic until fragrant and golden. This builds the base flavor of the soup.
Add the chopped potatoes to the pot along with vegetable broth. Bring to a boil, then simmer until the potatoes are tender, about 15 minutes.
Use an immersion blender to blend the soup until smooth and creamy. For a chunkier texture, blend only half of the soup and leave some potato pieces.
Add heavy cream to the soup and stir well. This adds richness and smoothness to the potato soup. Adjust the seasoning with salt and pepper.
For extra flavor, top the soup with shredded cheese, crispy bacon bits, and fresh chives. These add texture and a savory finish.
Let the soup simmer for a few minutes to allow the flavors to blend. If you prefer a thinner consistency, add more broth or cream.
Ladle the creamy potato soup into bowls and serve hot. Perfect as a main dish or side, especially on chilly days. Enjoy!
