Mutton Basmati rice Onions (sliced & fried) Yogurt Ginger-garlic paste Spices: Red chili, garam masala, Turmeric Whole spices : cloves, cinnamon cardamom, bay leaf, saffron Salt & ghee, lemon juice Fresh mint, coriander
Slice the red onions and fry them in ghee until caramelized
mutton pieces in a large bowl. Add coriander powder, red chilli, cumin powder, turmeric, salt, yogurt, ginger and garlic paste, deep fried onions and lemon juice. Add 1 tablespoon of oil
Add ghee, salt lemon juice, and whole spices and water. Bring the water to a rolling boil over high heat. add the drained and soaked rice to the hot water.
Slow cook the marinated mutton with onions and tomatoes until soft and juicy. This forms the biryani base.
Layer the rice over the meat. Add the remaining caramelized onions, fresh mint and coriander Add a tablespoon of ghee on top, and cover with a tight-fitting lid
Fluff gently, serve hot with raita, salan, or boiled eggs. A feast for the senses
