Gather the following ingredients: fresh corn, red bell pepper, cucumber, red onion, cilantro, lime, olive oil, salt, and pepper.
If using fresh corn, cook the cobs by boiling or grilling. Once cooled, cut the kernels off the cob. You can also use canned or frozen corn!
Dice red bell pepper, cucumber, and red onion into small pieces. These veggies will add crunch and a pop of color to your salad.
In a large bowl, combine the corn kernels with the chopped veggies and fresh cilantro. Stir gently to mix everything together.
In a small bowl, whisk together lime juice, olive oil, salt, and pepper. This simple dressing will bring all the flavors together.
