Bombay Sandwich Waffles

2 cups flour, 1 tablespoon baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon salt, 1 tablespoon sugar, 1 3/4 cups buttermilk, 1/3 cup vegetable oil, 2 large eggs, 1 teaspoon vanilla extract

8 slices of bread, 1 large potato, boiled and sliced, 1 cucumber, thinly sliced, 1 tomato, thinly sliced, 1 onion, thinly sliced, 1/4 cup boiled and mashed beetroot, Butter for toasting
