Pure ghee has a distinct and pleasant aroma, reminiscent of buttery caramel. If the ghee smells burnt or rancid, it may be of poor quality or adulterated with other fats.
Taste a small amount of ghee to assess its flavor. Pure ghee should have a rich, nutty taste with a slightly sweet undertone. It should not taste burnt, bitter, or sour.
Place a small amount of ghee on your palm and rub it with your fingers. Pure ghee has a high melting point and should melt slowly, without feeling greasy or oily. Adulterated ghee may melt quickly or leave a greasy residue on your skin.
Place a teaspoon of ghee in a glass of water at room temperature. Pure ghee will solidify and settle at the bottom of the glass, while impurities or additives may float on the surface or form separate layers.
Heat a small amount of ghee in a pan over low heat. Pure ghee will have a high smoke point and should not produce smoke or emit a burnt odor when heated. Adulterated ghee may smoke excessively or burn easily.
Pour a small amount of ghee onto a white paper or cloth and allow it to cool. Pure ghee should solidify into a clear, translucent substance without any visible impurities or sediment.
