Gather Your Ingredients!

You ll need chicken, tomatoes, onions, ginger-garlic paste, green chilies, and a mix of aromatic spices like cumin, coriander, and garam masala. Don't forget fresh cilantro and bell peppers for garnish!

Marinate the Chicken

Begin by marinating the chicken in yogurt, ginger-garlic paste, and spices. Let it sit for at least 30 minutes to infuse the flavors. The longer, the better!

Prepare the Kadai 

Heat oil in a Kadai or wok. Add whole spices like cumin seeds, cinnamon, and cardamom. Once they splutter, add onions and sauté until golden brown.

Cook the Chicken

Add marinated chicken to the Kadai. Sauté until the chicken is browned. Then, add chopped tomatoes and cook until they soften into a rich, tangy base.

Add Bell Peppers & Spices

Toss in chopped bell peppers, green chilies, and the remaining ground spices. Stir well and let the chicken simmer, absorbing all the wonderful flavors.

Simmer to Perfection

Add water or chicken stock to create a rich gravy. Let it simmer for 20-30 minutes, ensuring the chicken is fully cooked and the gravy thickens.
