Gather your ingredients: 500g chicken (with bone), 1 onion, 2 tomatoes, ginger-garlic paste, yogurt, gram masala, cumin, chili powder, and fresh coriander.
Marinate chicken with yogurt, ginger-garlic paste, chili powder, turmeric, and salt. Let it sit for 20-30 minutes to absorb the flavors.
In a pan, heat oil and sauté chopped onions until golden brown. Add chopped tomatoes and cook until soft and pulpy. Blend into a smooth paste.
Add the marinated chicken to the pan. Sauté for a few minutes, then add water (or chicken stock) to make the gravy. Let it simmer for 15-20 minutes.
Add gram masala, cumin powder, and salt to taste. Stir well, allowing the spices to infuse into the gravy. Adjust consistency with water as needed.
Let the gravy simmer for another 5 minutes until the chicken is fully cooked and the gravy thickens. Garnish with fresh coriander leaves.
