Toor dal Drumstick Vegetables: Carrot, Brinjal ,Yellow Pumpkin ,Drumstick ,Ladies finger Onion & Tomato Tamarind ,Jaggery Curry leaves , Coriander Sambar powder Salt & Turmeric
Pressure cook the toor dal with turmeric and water until soft. Mash it well and keep it aside it’s the soul of your sambar
Boil veggies with salt and a bit of turmeric until soft. Add chopped tomatoes and simmer for a few minutes.
Soak tamarind in warm water, squeeze out the juice, and add it to the cooked veggies. Add sambar powder, mix, and boil for 5–7 minutes.
Pour in the mashed dal and combine everything well. Simmer the sambar until it’s thick and aromatic. Adjust salt
In coconut oil, splutter mustard seeds, curry leaves, dry red chilies & a pinch of hing. Pour this tadka into the sambar. Done!
Once your Sambar is ready, serve it hot with rice, dosa, or idli. Enjoy the authentic taste of South India in every bite
