Ingredients

For the Masala Filling:

  • 4 Large bell peppers (any color), halved and deseeded
  • 2 tbsp Oil
  • 1 Onion, finely chopped
  • 2 Tomatoes, finely chopped
  • 2 Potatoes, boiled and mashed
  • 1 Cup Green peas, boiled
  • 2 Green chilies, finely chopped
  • 1 tsp Ginger-garlic paste
  • 1 tsp Cumin seeds
  • 1 tsp  Turmeric powder
  • 1 tsp Coriander powder
  • 1 tsp Garam masala
  • Salt to taste
  • Fresh cilantro leaves for garnish

Instructions

  • Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  • Add finely chopped onions and sauté until they turn golden brown.
  • Add ginger-garlic paste and chopped green chilies, and sauté for another minute.
  • Add finely chopped tomatoes and cook until they turn soft and mushy. 
  • Add turmeric powder, coriander powder, garam masala, and salt to taste. Mix well.
  • Add boiled and mashed potatoes along with boiled green peas. Mix until well combined and cook for 2-3 minutes. 
  • Remove the pan from heat and let the masala filling cool slightly. 
  • Preheat the oven to 350°F (175°C). 
  • Stuff the bell pepper halves with the prepared masala filling, pressing it gently to ensure even distribution.
  • Arrange the stuffed bell peppers in a baking dish and cover with Aluminum foil. 
  • Bake in the preheated oven for 20-25 minutes or until the bell peppers are tender and the filling is heated through.
  • Once done, remove the foil and garnish the stuffed bell peppers with fresh cilantro leaves.
  • Serve hot as a delicious appetizer or side dish, accompanied by rice or naan bread.
