Step 1: Prepare the Chicken Lollipops
Start by preparing the chicken wings. Using a sharp knife, separate each wing into three parts: the drumette, the flat or wingette, and the wing tip. Discard the wing tips or save them for making stock.
For each drumette, gently push the meat and skin towards the thicker end to expose the bone, creating the lollipop shape. You can also push the meat down further for a cleaner presentation.
Repeat this process for all the chicken wings until you have 12 lollipops.
Step 2: Marinate the Chicken
In a large bowl, combine soy sauce, ginger-garlic paste, chili sauce, paprika, black pepper, and salt.
Add the chicken lollipops to the marinade, ensuring they are well coated. Let them marinate for at least 30 minutes, or refrigerate for up to 4 hours for maximum flavor.
Step 3: Coat the Chicken
In a shallow dish, beat the egg. In another shallow dish, place the all-purpose flour.
Dip each marinated chicken lollipop first in the beaten egg, then coat evenly with the flour, shaking off any excess.

Heat oil in a deep frying pan or pot to 350°F (175°C).
Carefully add the coated chicken lollipops to the hot oil in batches, ensuring not to overcrowd the pan.
Fry the chicken lollipops for about 8-10 minutes, turning occasionally, until they are golden brown and cooked through.
Remove the fried chicken lollipops from the oil using a slotted spoon and drain on paper towels to remove excess oil.

Transfer the fried chicken lollipops to a serving platter.
