For the Dal:

  • 1 Cups Toor dal (pigeon peas)
  • 1 Medium onion, finely chopped
  • 1 Medium tomato, finely chopped
  • 1-2 Green chilies, slit
  • 1 tsp Ginger-garlic paste
  • 1/2 tsp Turmeric powder
  • 1 tsp Cumin seeds
  • 1 tsp Mustard seeds
  • 1 tsp Coriander powder
  • 1/2 tsp Red chili powder
  • 1/2 tsp Garam masala
  • 1 tbsp Oil or ghee
  • Salt to taste
  • 2 tbsp Chopped cilantro (coriander leaves)

For the Dhokli:

  • 1 Cups Whole wheat flour
  • 1/4 Cups Gram flour (besan)
  • 1 tsp Cumin seeds
  • 1/2 tsp Ajwain (carom seeds)
  • 1/2 tsp Turmeric powder
  • 1/2 tsp Red chili powder
  • 1/2 tsp Garam masala
  • 1 tbsp oil
  • Salt to taste
  • Water as needed

Instructions:

    1. Prepare the Dal:

    • Rinse the toor dal underrunning water until the water runs clear.
    • In a pressure cooker or large pot, add the rinsed dal, 3 cups of water, and a pinch of turmeric powder. Cook until the dal is soft and fully cooked (about 3-4 whistles in a pressure cooker or 25-30 minutes in a pot).
    • In a separate pan, heat oilor ghee over medium heat. Add cumin seeds and mustard seeds. When they start tocrackle, add chopped onions and green chilies. Sauté until the onions becometranslucent.
    • Add ginger-garlic paste andsauté for a minute until fragrant. Then, add chopped tomatoes, corianderpowder, red chili powder, and the remaining turmeric powder. Cook until thetomatoes are soft and the oil starts to separate.
    • Add the cooked dal to thetomato-onion mixture. Stir well and bring to a boil. Adjust the consistency byadding water if needed. Simmer for 10 minutes.
    • Add garam masala and salt to taste. Stir in chopped cilantro and remove from heat.

    2. Prepare the Dhokli:

    • In a mixing bowl, combinewhole wheat flour, gram flour, cumin seeds, ajwain, turmeric powder, red chilipowder, garam masala, and salt.
    • Add oil and mix well.Gradually add water and knead to form a smooth, soft dough. Cover and let itrest for 10 minutes.
    • Divide the dough into smallballs and roll each ball into thin circles (about 1/8 inch thick) using arolling pin.
    • Cut the rolled dough intodiamond or square shapes using a knife or pizza cutter.

    3. Cook the Dhokli:

    • Gently drop the dhoklipieces into the boiling dal. Stir occasionally to prevent sticking.
    • Cook for 10-15 minutes or until the dhoklis are cooked through and tender.

    4. Serve:

    • Serve hot Dal Dhokli garnished with extra chopped cilantro, along with a side of yogurt or pickle if desired.
