Ensure that the jasmine rice is cooked and cooled beforehand.
Beat the eggs and chop the mixed vegetables and green onions.
2. Heat the Pan:
Place a wok or large pan over medium-high heat and add vegetable oil.
3. Scramble the Eggs:
Pour the beaten eggs into the heated pan. Allow them to scramble, breaking them into small pieces.
4. Add Vegetables:
Add the mixed vegetables to the pan. Stir-fry until they are tender yet still crisp.
5. Stir in Rice:
