Ingredients

  • 4 Large Eggs
  • 4 Large Tortillas
  • 1 tbsp Dijon Mustard
  • 1/4 Cup Red Bell Pepper
  • 1/4 Cup Green Onions
  • Salt and Pepper to Taste
  • Lettuce leaves for added freshness

Instructions

  • Hard Boil the Eggs - Boil the eggs,
    cool it, peel it and chop the eggs
  • Prepare Mayo Mixture -
    combine chopped eggs,
    mayonnaise, Dijon mustard,
    diced red bell pepper, and
    chopped green onions.
    Mix well
  • Season and Mix -
    Season the egg mayo
    mixture with salt and
    pepper according to taste.
  • Warm Tortillas - Warm the tortillas
    in a dry skillet for a few seconds
    on each side
  • Assemble Wraps -
    Place a portion of the egg
    mayo mixture in the center
    of each tortilla. Optionally,
    add a lettuce leaf for freshness.
  • Wrap and Serve: - Fold in the sides of the
    tortilla and roll it up to create a wrap.
