Ingredients

  • 6 Hard-boiled eggs
  • 2 Onions, finely chopped
  • 2 Tomatoes, finely chopped
  • 2-3 Green chilies, slit
  • 1 tbsp  Ginger-garlic paste
  • 1 tsp Turmeric powder
  • 1 tbsp Red chilli powder
  • 1 tbsp Coriander powder
  • 1/2 tsp Garam masala powder
  • Salt to taste
  • 2 tbsp Cooking Oil
  • Fresh coriander leaves for garnish

Instructions

Boil the Eggs

  • Place the eggs in a pot, cover them with water, and bring to a boil. Once boiling, reduce the heat and let the eggs simmer for 10-12 minutes. Remove from heat, drain the water, and run the eggs under cold water. Peel and set aside.

Prepare the Masala

  • Heat oil in a pan over medium heat. Add mustard seeds and let them splutter. Then add the chopped onions and sauté until golden brown. Add ginger-garlic paste and slit green chilies. Sauté for a minute.

Add Spices

  • Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for a couple of minutes.

Add Tomatoes

  • Add the chopped tomatoes and cook until they turn soft and mushy. 

Simmer

  • Pour in a cup of water and bring it to a boil. Reduce the heat and let it simmer for a few minutes until the gravy thickens.

Add Eggs

  • Carefully slice each hard-boiled egg into halves and gently place them into the gravy. Spoon some gravy over the eggs to coat them evenly.

Cook

  • Simmer the gravy with eggs for 5-7 minutes, allowing the flavors to meld together.

Garnish and Serve

  • Garnish with fresh coriander leaves and serve hot with rice, roti, or bread.
