Ingredients

  • 500 Grams Lean ground chicken or turkey
  • 1 Medium onion, finely chopped
  • 2 tbsp Ginger-garlic paste
  • 2 Green Chillies Finely chopped (adjust according to spice preference)
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 1/2 tsp Garam masala
  • 1/2 tsp Ground cardamom
  • 1/4 tsp Ground cloves
  • Salt to taste
  • 2 tbsp Fresh coriander leaves, finely chopped
  • 2 tbsp Fresh mint leaves, finely chopped
  • 1 tbsp Besan (gram flour/chickpea flour)
  • 1-2 Tablespoons oil for cooking (if grilling or baking)

Instructions

How to Make Galouti Kebab

    Step 1: Marinate the Meat

    •  In a large mixing bowl, combine the ground chicken or turkey with the chopped onion, ginger-garlic paste, green chilies, ground cumin, ground coriander, garam masala, ground cardamom, ground cloves, salt, fresh coriander leaves, and fresh mint leaves.
    • Mix well until all the ingredients are evenly distributed throughout the meat mixture.
    • Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 1-2 hours, or overnight for best flavor. 

    Step 2: Prepare the Kebab Mixture

    • After marinating, remove the meat mixture from the refrigerator.
    • Add besan (gram flour) to the mixture. This helps bind the kebabs and absorb excess moisture.
    • Mix everything together until well combined and the mixture holds together when pressed. 

    Step 3: Shape the Kebabs

    • Divide the mixture into equal portions and shape them into small patties or cylinders.
    • You can wet your hands with a little water to prevent the mixture from sticking. 

    Step 4: Cook the Kebabs

    • Option 1: Grilling - Preheat your grill to medium-high heat. Lightly oil the grill grates. Place the kebabs on the grill and cook for about 6-8 minutes on each side, or until cooked through and nicely charred.
    • Option 2: Baking - Preheat your oven to 200°C (400°F). Place the kebabs on a lined baking sheet sprayed with cooking oil. Bake for 15-20 minutes, flipping halfway through, until they are cooked through and golden brown.

    Step 5: Serve

    • Once the kebabs are cooked, remove them from the grill or oven.
    • Serve the guilt-free Galouti kebabs hot with your favorite dipping sauce or chutney, such as mint yogurt sauce or tamarind chutney. 
    • Garnish with additional fresh coriander leaves and mint leaves if desired.
