For the Koftas:

  • 2 Cups Grated lauki (bottle gourd)
  • 1/2 Cups Gram flour (besan)
  • 1 tsp Ginger paste
  • 1 tsp Green chili paste
  • 1/2 tsp Turmeric powder
  • 1/2 tsp Cumin seeds
  • Salt to taste
  • Oil for deep frying

For the Gravy:

  • 2 tbsp Oil
  • 1 tsp Cumin seeds
  • 1 Large onion, finely chopped
  • 2 tsp Ginger-garlic paste
  • 2 Large tomatoes, pureed
  • 1/2 tsp Turmeric powder
  • 1 tsp Red chili powder
  • 1 tsp Coriander powder
  • 1/2 tsp Garam masala
  • 1/2 Cups Fresh cream or yogurt
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

Instructions:

    1. Prepare the Koftas:

    • Grate the lauki and squeezeout the excess water. Keep the water aside for later use.
    • In a bowl, mix the gratedlauki, gram flour, ginger paste, green chili paste, turmeric powder, cuminseeds, and salt.
    • Combine well to form athick batter. If the mixture is too wet, add a little more gram flour.
    • Heat oil in a deep fryingpan over medium heat.
    • Take small portions of themixture and shape them into small balls (koftas).
    • Fry the koftas in hot oil until they are golden brown and crisp. Drain on paper towels and set aside.

    2. Prepare the Gravy:

    • Heat oil in a pan over medium heat.
    • Add cumin seeds and let them splutter.
    • Add the chopped onions andsauté until golden brown.
    • Add the ginger-garlic pasteand cook for another 2 minutes.
    • Add the tomato puree andcook until the oil separates from the masala.
    • Add turmeric powder, redchili powder, coriander powder, and salt. Mix well.
    • Cook for a few minutes until the spices are well-blended.
    • Add the reserved lauki water and bring the gravy to a simmer.
    • Add fresh cream or yogurtand mix well. Cook for another 2-3 minutes.

    3. Combine and Serve:

    • Gently add the fried koftas to the gravy. Simmer for a few minutes to allow the koftas to absorb the flavors.
    • Garnish with freshcoriander leaves.
    • Serve hot with rice or roti.
