For the Malpua Batter:

  • 1 Cups All-purpose flour
  • 1/2 Cups Semolina (sooji)
  • 1/2 Cups Sugar
  • 1 Cups Milk
  • 1/2 tsp Cardamom powder
  • A few strands of saffron (optional)
  • 1/2 tsp Baking powder
  • 1 tbsp Ghee or melted butter (for the batter)
  • Oil or ghee for frying

For the Sugar Syrup:

  • 1 Cups Sugar
  • 1 Cups Water
  • 1/2 tsp Cardamom powder
  • A few saffron strands (optional)

Instructions:

    1. Prepare the Sugar Syrup:

    • In a saucepan, combinesugar and water. Heat over medium flame until the sugar dissolves completely.
    • Add cardamom powder andsaffron strands. Stir and simmer for about 5 minutes until the syrup slightlythickens.
    • Remove from heat and setaside.

    2. Prepare the Malpua Batter:

    • In a large bowl, mixtogether the flour, semolina, sugar, cardamom powder, and baking powder.
    • Gradually add milk whilestirring to form a smooth batter. The batter should be thick but pourable.
    • Add ghee or melted butter to the batter and mix well. Let the batter rest for about 10 minutes.

    3. Fry the Malpuas:

    • Heat oil or ghee in a frying pan over medium heat.
    • Pour a small ladleful of batter into the hot oil to form a small pancake. Flatten slightly with the back of the ladle.
    • Fry until the malpua turns golden brown and crispy on both sides, about 2-3 minutes per side.
    • Remove the malpua with aslotted spoon and drain excess oil on paper towels.

    4. Soak in Syrup:

    • Quickly dip the hot malpuasinto the warm sugar syrup, ensuring they are coated well.
    • Let them soak for about 1-2minutes, then remove and place on a plate.

    5. Serve:

    • Serve the malpuas warm, garnished with chopped nuts or a sprinkle of additional cardamom powder if desired.
