Ingredients

For Dough:

  • 1 Cup Rice flour
  • 1/2 Cup Water

For Filling:

  • 1 Cup Grated coconut
  • 1/2 Cup Grated jaggery
  • 1/4 tsp Cardamom powder

Instructions

Prepare the Filling

  • In a mixing bowl, combine grated coconut, grated jaggery, and cardamom powder. Mix well until the ingredients are evenly combined. This will be your sweet filling for the Pitha.

Prepare the Dough

  • In a separate bowl, mix the rice flour with water to form a smooth dough. Adjust the amount of water as needed to achieve the right consistency. The dough should be soft and pliable. 

Shape the Pitha

  • Take a small portion of the dough and flatten it with your palms to form a small disc. Place a spoonful of the coconut-jaggery filling in the center of the disc. Fold the edges of the dough over the filling to encase it completely, shaping it into a ball or any desired shape.

Cook the Pitha

  • You can choose to cook Pitha in different ways

Frying

  • Heat ghee or oil in a pan and fry the Pitha until they turn golden brown on all sides. 

Steaming

  • Place the Pitha in a steamer and steam for about 15-20 minutes until they are cooked through.

Boiling

  • Drop the Pitha into boiling water and cook until they float to the surface, indicating they are done.

Serve

  • Once cooked, remove the Pitha from the cooking medium and allow them to cool slightly.
    Serve the Pitha warm or at room temperature as a delightful sweet treat for festivals or special occasions.
