Ingredients

  • 2 Cup Flattened Rice (Poha) Soaked and Drained
  • 2 tbsp Oil
  • 1 tbsp Mustard Seeds
  • 1 tbsp Cumin Seeds
  • 1 Onion, Finely Chopped
  • 1 Green Chilli, Finley Chopped
  • 1/2 Cup Mixed Bell Peppers Diced
  • 1/2 Cup Boiled and Mashed Sweet Potatoes
  • 1/2 Cup Boiled Green Peas
  • 1/2 tbsp Turmeric Powder
  • Salt to Taste
  • 1 tbsp Lemon Juice
  • Fresh Coriander Leaves for Garnish

For Toppings

  • Sev (Crispy Chickpea Noodles)
  • Pomegranate Seeds

Instructions

  • Tempering - Add mustard seeds
    and cumin seeds in heated
    oil pan and allow them to
    pop it. Add finely chopped
    onions and green chili,
    mix well to fry them until
    the flavors smell 
  • Add Vegetable - Add mixed bell
    peppers, boiled, mashed
    sweet potatoes, and boiled
    green peas to the pan
    and cook until the vegetables
    are tender.
  • Add Spice - Add turmeric powder
    and salt over the vegetable
    mixture and Mix well
  • Poha Addition - Add soaked and
    drained poha to the pan
    and mix well the poha
    with vegetable mixture.
  • Add Lemon : After finishing of Poha,
    add lemon juice over the Poha
  • Garnish and Serve - Garnish and serve
    the Poha with fresh coriander
    leaves. Serve the recipe hot,
    topped with crispy sev and
    pomegranate seeds.
