Equipment

  • 1 Puttu kutti (cylindrical steaming vessel)
  • 1 Steamer or pressure cooker

Ingredients

  • 2 Cups Rice Flour
  • 1 Cup Freshly Grated Coconut
  • Water, as needed
  • Salt, to taste

Instructions

Preparing the Rice Flour Mixture

  • Take 2 cups of rice flour in a large mixing bowl. Gradually add water while continuously stirring to make a damp, crumbly mixture. Add salt to taste. Allow the mixture to rest for 10-15 minutes to attain the right consistency.

Layering with Grated Coconut

  • In a separate bowl, mix the freshly grated coconut with a pinch of salt. Intermittently layer the rice flour mixture and grated coconut in the puttu kutti, ensuring the top and bottom layers are rice flour. Repeat until the puttu kutti is filled, finishing with a layer of rice flour.

Assembling the Puttu Kutti

  • Place the cylindrical steaming vessel on top of the pressure cooker or steamer filled with water. Assemble the Puttu kutti on the nozzle of the cylindrical vessel. Steam the Puttu for 8-10 minutes until you see steam escaping from the top.

Cooking Process

  • Ensure the pressure cooker or steamer is on medium heat. Once steam is visible, reduce heat to low and let it steam for an additional 8-10 minutes

Checking Doneness

  • Insert a skewer or stick into the Puttu; if it comes out clean, it is ready. Remove the puttu kutti from the steamer.
