  • 1 Cups Semolina (rava)
  • 1 Cups All-purpose flour
  • 2 tbsp Sugar
  • 1 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1/2 tsp Salt
  • 1 1/2 Cups Buttermilk (or milk mixed with 1 tablespoon lemon juice)
  • 1 Large egg
  • 2 tbsp Melted butter or oil
  • 1 tsp Vanilla extract (optional)
  • Butter or oil for cooking

    1. Prepare the Batter:

    • In a large bowl, whisktogether the semolina, all-purpose flour, sugar, baking powder, baking soda,and salt.
    • In another bowl, beat the butter milk, egg, melted butter (or oil), and vanilla extract (if using).
    • Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be slightly lumpy but well mixed. Let the batter rest for about 10 minutes.

    2. Heat the Pan:

    • Heat a non-stick skillet orgriddle over medium heat. Lightly grease the pan with butter or oil.

    3. Cook the Pancakes:

    • For each pancake, pour about 1/4 cup of batter onto the hot skillet. Spread it out slightly with the back of a spoon if needed.
    • Cook until bubbles form onthe surface and the edges start to look set, about 2-3 minutes.
    • Flip the pancake and cookfor another 1-2 minutes, or until golden brown and cooked through. Adjust theheat as needed to avoid burning.

    4. Serve:

    • Transfer the cooked pancakes to a plate and keep warm while you cook the remaining pancakes.
    • Serve the pancakes warm with your choice of toppings, such as fresh fruit, honey, maple syrup, or yogurt.
