  • 800 Grams Chicken, cut into pieces
  • 2 Large onions, finely chopped
  • 3 Tomatoes, chopped
  • 1 Cup Plain yogurt
  • 1/4 Cup Cashew nuts, soaked in water for 30 minutes
  • 4 tbsp Cooking oil or ghee (clarified butter)
  • 2 tbsp Ginger-garlic paste
  • 1 tsp Cumin seeds
  • 1 Cinnamon stick
  • 4 Green cardamom pods
  • 4 Cloves
  • 1 Bay leaf
  • 1 tsp Turmeric powder
  • 2 tsp Coriander powder
  • 1 tsp Cumin powder
  • 1 tsp Red chilli powder (adjust to taste)
  • 1 tsp Garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

How to make Shahi chicken Curry

  • Heat 2 tablespoons of oil or ghee in a large pan over medium heat. Add cumin seeds, cinnamon stick, cardamom pods, cloves, and bay leaf. Sauté for about a minute until they release their aroma. 
  • Add chopped onions and sauté until they turn golden brown, about 7-8 minutes.
  • Add ginger-garlic paste and cook for another 2 minutes until the raw smell disappears. 
  • Add chopped tomatoes and cook until they turn soft and mushy, about 5-6 minutes. 
  • While the onions and tomatoes are cooking, blend the soaked cashew nuts with yogurt until smooth.
  • Once the tomatoes are cooked, add the chicken pieces to the pan. Increase the heat to medium-high and cook until the chicken pieces are lightly browned on all sides, about 5-7 minutes.
  • Reduce the heat to medium-low. Add turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Stir well to coat the chicken evenly with the spices. Cook for another 5 minutes, stirring occasionally. 
  • Pour in the cashew-yogurt mixture and mix well with the chicken and spices. Let it simmer uncovered for about 15-20 minutes, stirring occasionally, until the chicken is cooked through and the gravy thickens. 
  • Once the chicken is cooked, sprinkle garam masala over the curry and mix well. Adjust salt and spices according to your taste.
  • Garnish with fresh coriander leaves and serve hot with steamed rice, naan, or roti.
