  • 1 Cups Soy chunks
  • 2 tbsp Oil
  • 1 Large onion, finely chopped
  • 1 Bell pepper (capsicum),chopped
  • 1-2 Green chilies, slit (adjust to taste)
  • 2-3 Garlic cloves, minced
  • 1 Inch ginger piece, minced
  • 2 Tomatoes, finely chopped
  • 2 tbsp Soy sauce
  • 1 tbsp Chili sauce
  • 1 tbsp Tomato ketchup
  • 1 tbsp Vinegar (optional)
  • 1/2 tsp Sugar
  • 1/2 tsp Black pepper
  • 1 tsp Red chili powder (adjust to taste)
  • 1 tsp Cornflour (cornstarch) mixed with 2tablespoons water (optional, for thickening)
  • Salt to taste
  • Fresh coriander leaves for garnish (optional)

Instructions:

    1. Prepare Soy Chunks:

    • Boil 2 cups of water in apan and add the soy chunks. Cook for 5-7 minutes until they become soft.
    • Drain the water and squeezeout excess moisture from the soy chunks. Set aside.

    2. Cook Vegetables:

    • Heat oil in a large pan orwok over medium heat.
    • Add the chopped onions and green chilies. Sauté until the onions turn golden brown.
    • Add the minced garlic andginger. Sauté for another minute until fragrant.

    3. Add Tomatoes and Spices:

    • Stir in the choppedtomatoes and cook until they soften and blend into the mixture.
    • Add soy sauce, chili sauce ,tomato ketchup, vinegar (if using), sugar, black pepper, red chili powder, and salt. Mix well and cook for a couple of minutes.

    4. Combine Soy Chunks:

    • Add the prepared soy chunksand chopped bell pepper to the pan. Stir well to coat the soy chunks with thesauce and spices.
    • Cook for about 5-7 minutes,allowing the soy chunks to absorb the flavors and the bell pepper to soften.

    5. Thicken Sauce (Optional):

    • If you prefer a thickersauce, stir in the cornflour-water mixture and cook for an additional 2-3minutes until the sauce thickens to your desired consistency.

    6. Finish and Garnish:

    • Taste and adjust seasoningif needed.
    • Garnish with freshcoriander leaves if desired.

    7. Serve:

    • Serve hot with steamed rice, noodles, or as a standalone dish.
