  • 500 grams (1 Pound) large prawns, peeled and deveined
  • 1 Cups Plain yogurt
  • 2 tbsp Lemon juice
  • 2 tbsp Vegetable oil
  • 1 tbsp Ginger-garlic paste
  • 1 tbsp Ground cumin
  • 1 tbsp Ground coriander
  • 1 tbsp Paprika (for color)
  • 1 tsp Ground turmeric
  • 1 tsp Garam masala
  • 1 tsp Red chili powder (adjust to taste)
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 tsp Chat masala (optional)
  • 1 tsp Dried fenugreek leaves (kasuri methi) (optional)

For Garnish:

  • Fresh cilantro leaves
  • Lemon wedges
  • Mint chutney (optional)

    1. Prepare the Marinade:

    • In a large bowl, combinethe plain yogurt, lemon juice, vegetable oil, ginger-garlic paste, groundcumin, ground coriander, paprika, ground turmeric, garam masala, red chilipowder, salt, black pepper, chat masala (if using), and dried fenugreek leaves(if using).
    • Mix well until all the ingredients are fully combined.

    2. Marinate the Prawns:

    • Add the peeled and deveined prawns to the marinade. Toss them gently to ensure they are well coated with the marinade.
    • Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to penetrate the prawns.

    3. Preheat the Grill or Oven:

    • Preheat your grill to medium-high heat or your oven to 200°C (390°F). If using an oven, line a baking tray with foil or parchment paper for easy clean up.

    4. Grill the Prawns:

    • Thread the marinated prawnsonto skewers, leaving a little space between each prawn (if using woodenskewers, soak them in water for 30 minutes before using to prevent burning).
    • Brush the grill grates or baking tray with a little oil to prevent sticking.
    • Place the skewers on the grill or baking tray. Grill the prawns for about 2-3 minutes on each side, or until they are cooked through and have a slight char. The total cooking time should be about 10-15 minutes. If using an oven, bake for 10-12 minutes, turning once halfway through.

    5. Serve:

    • Remove the prawns from the grill or oven and let them rest for a few minutes.
    • Garnish with fresh cilantro leaves and lemon wedges.
    • Serve hot with a side ofmint chutney and steamed rice or naan, if desired.
