  • 1 Cup Milk
  • 1/2 Cup Heavy cream (optional, forcreamier popsicles)
  • 1/4 Cup Sugar (adjust to taste)
  • 2 tbsp Thandai powder (availablein stores or homemade)
  • 1/4 tsp Cardamom powder
  • A pinch of saffron strands(optional)
  • 2 tbsp Chopped mixed nuts(almonds, pistachios, cashews)
  • Popsicle molds and sticks

Instructions:

    1. Prepare the Thandai Mixture:

      1. Heat the milk:

      • In a saucepan, heat the milk over medium heat until it starts simmering.Add sugar and stir until dissolved.

      2. Add Thandai powder and spices:

      • Reduce the heat to low. Stir in Thandai powder, cardamom powder, andsaffron strands (if using). Let it simmer for 1-2 minutes, stirringoccasionally to infuse the flavors.

      3. Cool the mixture:

      • Remove from heat and let the mixture cool completely. You can speed upthe cooling process by placing the saucepan in an ice bath.

      2. Assemble the Popsicles:

        1. Add chopped nuts:

        • Once the Thandai mixturehas cooled, stir in chopped nuts. This adds a crunchy texture to the popsicles.

        2. Fill the molds:

        • Pour the Thandai mixtureinto popsicle molds, leaving a little space at the top for the mixture toexpand when freezing. Insert popsicle sticks into each mold.

        3.  Freeze:

        • Place the molds in thefreezer and freeze for at least 4-6 hours, or preferably overnight, until thepopsicles are completely frozen.

        3. Serve:

          1. Unmoldthe popsicles:

          • To unmold, run the popsiclemolds under warm water for a few seconds to loosen them. Gently pull out thepopsicles.

          2. Serve:

          • Enjoy Thandai Popsiclesimmediately as a refreshing treat on a hot day. Optionally, garnish withadditional chopped nuts or a sprinkle of Thandai powder before serving.
