Ingredients

  • 4 Large Eggs
  • 1 Onion, Finely Chopped
  • 2 tomatoes, finely chopped
  • 2 Green Chilies, Finely Chopped
  • 1/2 Teaspoon Turmeric Powder
  • 1/2  Teaspoon Red Chili Powder
  • 1/2 Teaspoon Cumin Powder
  • Salt to taste
  • Fresh Coriander Leaves for Garnish
  • 2 Tablespoons Oil or Ghee

Instructions

Prepare Ingredients

  • Finely chop 1/4 onion, 1/2 tomato, and 1 green chili. Whisk 4 eggs in a bowl

Heating Oil

  • Heat 2 tbsp oil in a wide-bottomed pan on medium heat

Sautéing Onions

  • Add finely chopped onions to the heated oil. Sauté until onions turn translucent and golden.

Add Green Chili and Tomatoes

  • Add finely chopped green chilli to the pan. Once the onions are golden, add chopped tomatoes. Cook until tomatoes soften and the mixture becomes slightly mushy

Spice it Up

  • Sprinkle turmeric, red chilli, cumin powder, and salt over the mixture. Stir well to evenly coat the ingredients with spices.

Scrambling Eggs

  • Pour the whisked eggs into the pan. Gently scramble the eggs within the mixture until fully cooked

Garnish

  • Add fresh coriander leaves for garnish. Stir to incorporate the coriander.

Serve Hot

  • Serve the Egg Bhurji immediately while it's hot.
