Ingredients

  • 8 Eggs
  • 2 Large Onions, Finely Chopped
  • 2 Large Tomatoes, Finely Chopped
  • 3 Green chilies, Finely Chopped
  • 1 tbsp Ginger-Garlic Paste
  • 1/2 Cup Cooking Oil
  • 1 tbsp Cumin Seeds
  • 1 tbsp Mustard Seeds
  • 1/2 tbsp Turmeric Powder
  • 1 tbsp Red Chilli Powder
  • 1 tbsp Coriander Powder
  • 1 tbsp Garam Masala
  • Salt to taste
  • Fresh Coriander Leaves for Garnish

Instructions

Boiling Eggs

  • Boil eggs for 10-12 minutes, cool, peel, and set aside.

Preparing Tadka Base

  • Heat oil, add cumin seeds, mustard seeds, then onions. Sauté until golden brown.

Adding Aromatics

  • Add ginger-garlic paste, green chilies. Sauté for 2 minutes.

Add Tomatoes

  • Add tomatoes; cook until soft, and oil separates (10-12 minutes)

Spicing it Up

  • Sprinkle turmeric, red chili, coriander powder, and salt. Cook for 5-7 minutes

Add Eggs

  • Gently add boiled eggs to the masala. Cook for 5-7 minutes

Add Garam Masala

  • Sprinkle garam masala, mix evenly

Garnish and Serve

  • Garnish with fresh coriander leaves.
    Serve hot with rice, roti, or naan
