Mooli Paratha is a traditional North Indian flatbread stuffed with grated spiced radish. It's a flavorful and nutritious breakfast or lunch option, best enjoyed with yogurt, pickle, or butter.
In a mixing bowl, combine the whole wheat flour and salt.
Add oil or ghee and mix well with your fingers.
Gradually add water, a little at a time, and knead to form a soft, smooth dough. The dough should be pliable but not too sticky.
Cover the dough with a damp cloth and let it rest for 20-30 minutes.
2. Prepare the Filling:
Place the grated radish in a clean cloth or cheesecloth and squeeze out excess water. This prevents the filling from becoming too soggy.
In a bowl, mix the grated radish with cumin seeds, coriander powder, turmeric powder, red chili powder ,ajwain, garam masala (if using), salt, and chopped cilantro (if using). Add lemon juice if desired.
3. Assemble the Parathas:
Divide the rested doughinto 8-10 equal-sized balls.
Roll out one dough ballinto a small circle (about 4 inches in diameter) on a floured surface.
Place a portion of the radish filling in the center of the rolled-out dough.
Fold the edges of the dough over the filling to seal it completely, forming a stuffed ball.
Gently flatten the stuffed dough ball with your fingers, then roll it out carefully into a circle, about6-8 inches in diameter. Be gentle to avoid the filling from spilling out.
4. Cook the Parathas:
Heat a griddle or tawa over medium heat.
Place the rolled-out paratha on the hot griddle and cook for 1-2 minutes until small bubbles start to form.
Flip the paratha and cook the other side for about 1 minute. Apply a little oil or ghee on both sides and cook until golden brown and crispy.
Repeat the process with the remaining dough and filling.
5. Serve:
Serve the Mooli Paratha hot with yogurt, pickle, or a side of your choice.
