For the Dough:

  • 2 Cups Whole wheat flour
  • 2 tbsp Oil or ghee
  • Water, as needed
  • A pinch of salt

For the Filling (Puran):

  • 1 Cups Chana dal (split Bengal gram)
  • 1 Cups Jaggery, grated
  • 1/2 tsp Cardamom powder
  • A pinch of nutmeg powder(optional)
  • Water for cooking the dal

For Cooking:

  • Ghee or oil, for cooking

    1. Prepare the Dough:

    • In a large bowl, combinethe whole wheat flour and a pinch of salt.
    • Add 2 tablespoons of oil orghee and mix well.
    • Gradually add water and knead to form a soft, pliable dough.
    • Cover the dough with a damp cloth and let it rest for at least 30 minutes.

    2. Prepare the Filling (Puran):

    • Rinse the chana dal thoroughly and cook it in a pressure cooker with enough water until it is soft but not mushy (about 3-4 whistles).
    • Drain any excess water fromthe cooked dal and mash it well.
    • In a heavy-bottomed pan,add the mashed chana dal and grated jaggery.
    • Cook the mixture on mediumheat, stirring continuously until the jaggery melts and the mixture thickens.
    • Add cardamom powder andnutmeg powder (if using) and mix well.
    • Continue to cook until themixture leaves the sides of the pan and has a thick consistency.
    • Remove from heat and let the filling cool completely.

    3. Assemble the Puran Poli:

    • Divide the dough and thefilling into equal-sized portions.
    • Roll out a portion of thedough into a small circle on a floured surface.
    • Place a portion of thefilling in the center of the dough circle.
    • Bring the edges of thedough together to seal the filling inside and pinch off any excess dough.
    • Gently flatten the stuffed dough ball and roll it out into a larger circle, about 6-8 inches in diameter. Be careful not to tear the dough and let the filling come out.

    4. Cook the Puran Poli:

    • Heat a griddle or tawa overmedium heat.
    • Place the rolled puran polion the hot griddle and cook until golden brown spots appear on one side.
    • Flip the puran poli and apply ghee or oil on the cooked side.
    • Cook the other side untilgolden brown and apply ghee or oil.
    • Repeat the process with the remaining dough and filling portions.

    5. Serve:

    • Serve the puran poli hotwith a dollop of ghee or a side of milk.
