2 medium-sized potatoes, peeled and cubed
1 small cauliflower, cut into florets
2 tablespoons oil
1 teaspoon cumin seeds
1 onion, finely chopped
2 tomatoes, finely chopped

1 green chili, finely chopped (optional)
1 teaspoon turmeric powder
1 teaspoon red chili powder

Instructions:
1. मध्यम आंच पर एक बड़े पैन या कढ़ाई में तेल गरम करें। जीरा डालें और उन्हें फुटने दें।
2. कटा हुआ प्याज डालें और सुनहरा भूरा होने तक भूनें।
3. अगर उपयोग किया जा रहा है, तो अदरक–लहसुन का पेस्ट और हरी मिर्च डालें। एक मिनट तक भूनें जब तक कच्चा गंध गायब नहीं हो जाता।
4. कटे हुए टमाटर डालें और तब तक पकाएं जब तक वे गल न जाएं और मसाले से तेल अलग न होने लगे.
5. अब इसमें हल्दी पाउडर, लाल मिर्च पाउडर, धनिया पाउडर और नमक डालें. अच्छी तरह मिलाएँ और एक और मिनट तक पकाएँ।
6. पैन में कटे हुए आलू और फूल गोभी के फूल डालें। सब्जियों को मसाले से अच्छे से लिपटने के लिए हल्के हाथों से मिलाएं।
7. पैन को ढकें और धीमी आंच पर लगभग 15-20 मिनट तक या आलू और फूलगोभी के नरम होने तक, बीच–बीच में चलाते हुए पकाएं।
8. जब सब्जियां पूरी तरह से पक जाएं, तो उपर से गरम मसाला छिड़कें और अच्छे से मिला लें।
9. ताजी कटी हरी धनिया से सजाएं।
10. गरमागरम रोटी, नान या चावल के साथ परोसें।
